Healthy Apple Peanut Butter Bars

Since I started my running journey seven weeks ago for the Color Run I really haven’t dieted.  (YES, THAT IS SEVEN WEEKS I HAVE BEEN RUNNING NOW!  DID A 20 MINUTE RUN WITHOUT STOPPING TODAY!)  So it’s no surprise that I have only lost about 5 pounds.   I am trying to incorporate healthier foods in my life.  It’s just a slow process since I have ate horrible for over twenty plus years.   I was going to make some no bake chocolate cookies but decided to try these for a healthier alternative.   They really were tasty!  Not overly sweet but enough to knock out my sugar craving.  Great pin!


Apple Peanut Butter Snack Bars


Makes 9-16 bars, depending on what size you cut them

2 cups rolled oats (I used the regular canister of oats)

1 cup shredded apple (one medium apple)

I used my grater as shown in pix but can use food processer to shred apple.

1/4 cup peanut butter

1/2 cup honey

2 eggs

1/2 teaspoon cinnamon

1/2 teaspoon pure vanilla extract

Preheat the oven to 350 degrees. Grease a 9×9 baking dish and set aside.

Combine all ingredients in a medium bowl and mix well. Transfer the mixture to the baking dish and use the back of a wooden spoon or a spatula to press it down evenly.

Bake in the preheated oven for 20 minutes, or until the edges are just barely browned. Allow to cool before cutting into squares.

Be sure to let them cool before cutting.  Now they don’t get very firm so don’t expect them to be like granola bars.   Keep them in an airtight container.
