Cowboy Potatoes

I hope everyone is having a great Wednesday!  I apologize for no post yesterday.  I came home Monday night from dinner with internet down.  I didn’t get it back until Tuesday.   By the time I got home from Bass Lake,  I was too tired to post though.  Being on a boat for five hours will take it out of you in a good way. 🙂

I have to share the Cowboy Potatoes recipe I made Sunday.  I have made potatoes on the grill but none tasted as good.  I believe the difference is how they were done in foil.  I had made foil pouches but these 2 sheets seemed to work much better.  Each bite tasted like a mouth watering mini baked potato.   So delicious!  I will be making these often!

Cowboy Potatoes


6 large potatoes, peeled and cut into 1-1/2 inch chunks (I used 10 new potatoes cut into chunks)
1 med or large Vidalia onion
1 teaspoon seasoned salt
1 stick butter

Place potato chunks on a piece of foil.
Slice onion into strips and sprinkle over potatoes.
Sprinkle potatoes and onions with seasoned salt and chunks of butter.

Cover with another sheet of foil that is same size as other.
Fold the edges over and bring up on the sides.
The two pieces of foil instead of a folded-over packet gives it more room for the steam.

On gas grill cook it on medium for 20 minutes. (See her post for charcoal)
Take off grill but don’t open until ready to serve.  (I let mine sit for 10 min.)
She suggests to add sour cream and cheddar cheese to them.  We ate them just as is though because they were so flavorful.
