This was a really tasty smoothie and to be only 150 calories!  Will be making these a lot on the new exercise and getting healthier adventure I am on. 🙂

Orange Smoothie

1 peeled seedless orange

1 cup ice cubes

1/2 cup low-fat milk

1 teaspoon of honey

1/2 teaspoon of vanilla extract (next time I think I will add a teaspoon just to have more of a creamcicle taste)

Put in blender and blend until smooth.  (My blender has a smoothie button.)  It filled that glass up along with half of a small juice glass.

Healthy snack of Crunchy Roasted Chickpeas

Surgery went great today for hubby.  Thank you for all the prayers!!  He’ll be on the mend for 6-8 weeks as his back heals from the surgery.   But hopefully it got rid of the nerve problem.  He hasn’t felt it in his legs since he woke up just surgical pain.  So that’s a great sign!

I will be honest I don’t like raw chickpeas so when I saw this pin I was on the fence.  After reading the reviews and thinking I may like them cooked, I decided to try it.  I only made half of the original recipe just to see what we thought.  I am so glad I made it!

I actually burnt mine just a tad so be sure to watch the time. I used cinnamon and salt but next time trying garlic and paprika.  They reminded me of cross between a popcorn kernel and some type of nut.   Hubby and I ate the entire can even though they were slightly burnt.  Great pin!

Jocelyn’s Crunchy Roasted Chickpeas

Ingredients:

2 cans chickpeas
3 Tbls. extra-virgin olive oil
coarse salt
1 1/2 tsp. cinnamon, paprika, pepper, etc… (optional)

Directions:

Preheat oven to 400. Drain and rinse the chickpeas and scatter on a paper towel-lined rimmed baking sheet. Let stand 15 minutes. Remove the paper towels and toss chickpeas with olive oil.

Roast until crisp and golden, about 45 minutes, stirring occasionally. Toss with coarse salt and 1 1/2 tsp of desired seasoning, if desired and serve. Store cooled chickpeas in an airtight container up to 1 week

The daughter in law and son got a fruit infusion water pitcher for a wedding gift. They raved about it so I asked for one from them for Christmas. I love it! There are so many choices on making flavored water. Here are 35 ideas. I am linking to another blogger that has great info on how to do it glasses or a pitcher. Even though mine is in the infusion pitcher you can add the fruit directly to the glass or pitcher and have the same great results.
